Now, who has had alcohol infused pancakes?
If you would have asked me before this past weekend, I would have said no way. There is no way that they would actually turn out.
But I took a simple pancake recipe, modified it with the ingredients that I had and the pancakes turned out delicious. Now it is your turn to make them this weekend!
This past weekend, my boyfriend and I were walking around the grocery store Friday night trying to decide what to buy for food for the weekend. While going around the store, I was asking what ingredients he may have at his house before we bought anything. He listed off the basics; flour, sugar, oil, rice, frozen meat, frozen vegetables, maple syrup. From that, we decided to make pancakes on Saturday morning since we only needed to pick up a few items.
So here they are! Boozy Chocolate Chip Pancakes, infused with almond milk Bailey’s. The inspiration definitely comes from Shawn, as he has talked about this creation of “his” for a while now!

INGREDIENTS
(makes four servings)
- 1 cup all-purpose flour
- 2 tablespoons white sugar
- 2 teaspoons baking soda *
- 1 teaspoon salt
- 1 egg, whisked
- 1 cup Almond Milk Bailey’s **
- 2 tablespoons vegetable oil ***
- 1/2 cup semi-sweet chocolate chips
* Normally, a person would use baking powder in a pancake recipe. We only had baking soda, so I just substituted and they turned out just as fluffy.
** You can definitely use original Bailey’s or whatever flavor you may have. Using a cup of Bailey’s makes the pancakes very boozy (which may or may not be a good thing!). You could substitute half a cup of milk for half of the Bailey’s.
*** Any type of oil that you have will do. I used olive oil this time around.
DIRECTIONS
- In a large bowl, combine your dry ingredients together. This includes the flour, sugar, baking soda and salt.
- In a smaller bowl, crack the egg carefully and then whisk the egg until the yolk and the egg white are combined.
- Add in the Bailey’s and the oil to the whisked egg.
- Pour the wet mixture of egg, Bailey’s and oil into the dry ingredients and mix until smooth (no lumps). Mix in the chocolate chips at the end.
- Use a 1/3 measuring cup to scoop the batter into a greased, medium heated frying pan. Cook thoroughly and brown on both sides, serve hot.
- Add your favourite pancake topping. Mine is maple syrup!

With all of the substitutions in these pancakes (the Bailey’s and baking soda instead of baking powder), they turned out fluffy and awesome. We could 100% taste the Bailey’s and one of us may have gotten a little tipsy during breakfast, oops!
